Yellow gnocchi with mussels and cuttlefish ink
Ingredients
(for 4\5 persons)
- 800 gr of potatoes
- 200 gr of flour
- 2 eggs
- salt to taste
- nutmeg
Ingredients for the sauce
- 1 leek
- extra virgin olive oil
- salt as required
- 300 ml of cream
- 4 g di saffron
- pinch of pepper
- 1 kg of steamed open mussels
- a teaspoon of cuttlefish ink
- leek sprouts
Preparation
- Mix the previously peeled boiled potatoes with flour and eggs, salt and a pinch of nutmeg
- Make the Dumplings
- Cook them in boiling salted water
- In the meantime, prepare the sauce with the ingredients listed above over low heat
Plating
Smear the bottom of the plate with the squid ink, place the sautéed gnocchi with their sauce and decorate with leek sprouts.
